Simple and tasty keto pancake recipes: one for traditional pancakes and one for pancake muffins.

Keto Pancakes

Ingredients
  

  • 2 Eggs
  • 1 Tbsp Water
  • 2 oz Cream Cheese
  • 2/3 cup Almond Flour
  • 1 tsp Baking Powder
  • 2 tsp Vanilla Extract
  • 1/2 tsp Cinnamon
  • 2 1/2 Tbsp Erythritol

Method
 

  1. Combine all ingredients thoroughly.
  2. Cook stovetop on medium high heat like regular pancakes.

Keto Pancake Muffins

Ingredients
  

  • 1 1/3 cup Almond Flour
  • 2 tsp Baking Powder
  • 1-2 Tbsp Sweetener
  • 4 Eggs
  • 1/4 cup Water
  • 1 tsp Vanilla Extract
  • 4 oz Cream Cheese

Method
 

  1. Pre heat oven to 350 degrees.
  2. Mix all ingredients and split into muffin tin.
  3. Bake for 20 minutes.

Both recipes do really well and taste similarly to regular pancakes. I top them with butter and syrup.
